Sweet Potato Shepherd’s Pie

Pie Filling:

  • 1 pound extra lean ground beef or turkey
  • 1 red onion, chopped
  • 2 medium carrots, peeled and chopped
  • 4 mushrooms, sliced
  • 1/2 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/3 cup tomato sauce
  • 1 tablespoon flaxseed meal
  • 2 tablespoons water

Sweet Potato Topping:

  • 2 medium sweet potatoes (or yams), peeled and cubed
  • 1 tablespoon grass-fed butter or coconut oil
  • 1/2 teaspoon sea salt

Directions:

  • Preheat oven to 375 degrees Fahrenheit. Combine flaxseed meal with water and set aside. Once oven is at 375 F, put sweet potatoes in the oven.
  • In a skillet on medium heat, begin to brown ground beef. Once beef is partially browned, add chopped onions, carrots, mushrooms, peppers, and garlic.
  • Cook meat and veggies on medium heat until veggies are soft, about 10-12 minutes.
  • Stir in tomato paste, flaxseed meal, chilli powder, salt and pepper.
  • Remove sweet potatoes from oven once tender. Then add sweet potatoes, butter and salt to a food processor (or blender) and process until smooth.
  • Transfer the meat and veggie filling to a casserole dish and top with the mashed sweet potatoes.
  • Bake for 15 minutes. Remove from oven, allow to cool for 5 minutes, and enjoy!
