Pie Filling:
- 1 pound extra lean ground beef or turkey
- 1 red onion, chopped
- 2 medium carrots, peeled and chopped
- 4 mushrooms, sliced
- 1/2 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/3 cup tomato sauce
- 1 tablespoon flaxseed meal
- 2 tablespoons water
Sweet Potato Topping:
- 2 medium sweet potatoes (or yams), peeled and cubed
- 1 tablespoon grass-fed butter or coconut oil
- 1/2 teaspoon sea salt
Directions:
- Preheat oven to 375 degrees Fahrenheit. Combine flaxseed meal with water and set aside. Once oven is at 375 F, put sweet potatoes in the oven.
- In a skillet on medium heat, begin to brown ground beef. Once beef is partially browned, add chopped onions, carrots, mushrooms, peppers, and garlic.
- Cook meat and veggies on medium heat until veggies are soft, about 10-12 minutes.
- Stir in tomato paste, flaxseed meal, chilli powder, salt and pepper.
- Remove sweet potatoes from oven once tender. Then add sweet potatoes, butter and salt to a food processor (or blender) and process until smooth.
- Transfer the meat and veggie filling to a casserole dish and top with the mashed sweet potatoes.
- Bake for 15 minutes. Remove from oven, allow to cool for 5 minutes, and enjoy!
